- Maintain cleanliness and sanitation of the sushi bar and preparation areas, ensuring compliance with food safety regulations.
- Ensure proper handling and care of knives and other kitchen tools, maintaining sharpness and safety.
- Manage inventory of fresh ingredients, ensuring sufficient stock and minimizing waste.
- Follow standard recipes and portion sizes to maintain consistency in flavor and presentation.
- Educational Background: Diploma or certificate in culinary arts, specializing in Japanese cuisine, from a recognized culinary school or institution.
- Experience: Minimum of 2 years experience in the preparation and production of sushi in high volume operations in any well-known restaurant.
- Knife Skills: Demonstrated expertise in using knives, particularly for sushi preparation.
- Food Safety Knowledge: Comprehensive understanding of safe and sanitary food handling principles, including HACCP protocols.
